Since I’m quarantined staying home plus I’m down 40 pounds on WW, I love making WW-friendly recipes at home, like this easy poke bowl. It seriously was so quick to make it and the final result was as good as any I’ve had in a restaurant!
The best part is that I could decide just how many WW Smart Points I wanted it to be. Like, the poke sauce was sugary so that gave it more smart points, and avocado is always a Weight Watchers points bomb… but I decided for this particular recipe that they were worth it.
Now that we are all doing more cooking from home, I’ve tried to get more creative in my recipes. I’ve tried to replicate what I would order at a restaurant, and I love Asian-inspired dishes. A poke bowl is more like food prep to me than actual cooking, you know? Like, I made the sushi rice and I seared the tuna, but the rest of it was chopping and assembling in a bowl.
That’s why I love making poke bowls!
